Lovely Vanilla, Chocolate & Lemon Cupcake

Think of celebration, think of cupcakes. This is what we know; everyone loves cupcake, don’t you? Basically the taste of a cupcake is judged on both the cake and the frosting; you can’t miss any part of it, unless you want to make some simple cupcakes (without frosting). The cupcake should be flavoring, juicy, sweet but not greasy. I wanted to make special and meaning cupcakes long time ago; however there’s always some reasons to postpone the plan, until 15 October 2011, which is a coincident chance. My husband told me he’s joining his colleague’s son’s (1 year old baby) birthday party this 15 October 2011. Then I’ve decided to make something special for the baby, don’t know why, just feel like want to do something for the baby, although I don’t know him well lol….

I’ve made 18 cupcakes and send 12 for my husband colleague’s baby. To make the cupcake looks presentable, I bought two special and delicate cupcake boxes/holders from baking accessories shop. The boxes take away me about $3.

I developed the cupcake in three flavors – pure vanilla, chocolate and lemon. Other than this, the frosting/topping flavor is also different for each category of cupcake. I decorated the cake with some lovely items, includes gummy bears, chocolate chips, colorful candies etc.

The cupcake recipes are as below (by different flavoring). The method or preparation step is pretty much the same, you can repeat the same for each flavor of cupcake, and only the ingredients make the difference.

Vanilla Cupcake (with red & green frosting) – Serve 6

 

 

 

Ingredients

  • 67g butter or margarine (softened)
  • 67g castor sugar
  • 67g self-raising flour, sifted
  • 1 large egg
  • 1/8 baking powder (optional)
  • 1/3 tsp vanilla extract
  • 2 tbsp milk

Frosting

  • 50g butter
  • 88g icing sugar
  • Strawberry jam
  • Green food coloring
  • Few drops of lemon juice

Decorating (Swirl & lily flower technique)

  • Grated coconut
  • Chopped almonds
  • Cake decorating tools

Chocolate Cupcake (with orange zest frosting) – Serve 6

 Ingredients
  1. 67g butter or margarine (softened)
  2. 67g castor sugar
  3. 67g self-raising flour, sifted
  4. 3 tbsp unsweetened coco powder
  5. 1 large egg
  6. 1/8 baking powder (optional)
  7. 1/3 tsp vanilla extract
  8. 2 tbsp milk

Frosting

  • 50g butter
  • 88g icing sugar
  • 1 tbsp fresh orange zest
  • 1tbs of fresh orange juice

Decorating (swirl technique as base for gummies and coco dusting)

  • Teddy Bear Jelly Drops Gummies
  • Coco powder
  • Cake decorating tools

Lemon Cupcake (with blueberry frosting) – Serve 6

Ingredients

  • 67g butter or margarine (softened)
  • 67g castor sugar
  • 67g self-raising flour, sifted
  • 1tbs lemon zest
  • 1 large egg
  • 1/8 baking powder (optional)
  • 1/3 tsp vanilla extract
  • Few drops of fresh lemon juice
  • 2 tbsp milk

Frosting

  • 50g butter
  • 88g icing sugar
  • 2tbsp blueberry jam
  • 1tbs of fresh lemon juice

Decorating (swirl technique)

  • Chocolate Chips
  • Colorful mini candies
  • Cake decorating Tools

Preparation / Method

Preheat the Oven to 180 degree

For The Cake

  1. Mix the dry ingredients into small bowl: self-raising flour, baking powder, coco powder (for vanilla chocolate cupcakes only)
  2. In another bowl, cream together the wet ingredients – butter, sugar and vanilla extract, add the lightly beaten egg slowly to the mixture. Make sure the egg is incorporating fully to the batter and till pale and fluffy. Add lemon juice and zest to the vanilla lemon cupcake.
  3. Fold in the dry ingredients (flour mixture) to the wet ingredients alternately with milk, mix well.
  4. Spoon the batter to the cupcake liners, should be approximately 2 spoons full.

For The Frosting

  • Cream the butter & icing sugar, beat it by electric mixer until light and fluffy. Insert different materials for different frosting cream:
  1. For Pure Vanilla Cupcake – Add lemon juice, then divide the batter into two parts, red (mix it with strawberry jam) and green (mix it with green food coloring)
  2. For Vanilla Chocolate Cupcake – Fresh orange juice and orange zest
  3. For Vanilla Lemon Cupcake – lemon juice, blueberry jam
